'Exquisite' means of such beauty or delicacy as to arouse intense delight .A food that's creative, thoughtfully prepared, beautifully presented and easy to eat makes it absolutely delicious.On this corner,I have tried to recollect the spicy memories and food that I have enjoyed, a delicacy that still persist on the corner of my heart.Hope you too will enjoy it. Spicy Fried Rice


Basmati rice - 2 cups
Green peas - 1/2 cup (Soak it for atleast 2 hrs)
Carrot - 1 medium size
Potato - 1 medium size
Onion - 1 big finely chopped
Green chilly - 2-3 No:s (big)  finely chopped

Turmeric powder - 1/2 - 1 teasppon
Chilly powder - 1 1/2 teaspoon
Pepper powder - 1/4 teaspoon
Ghee - 2  teaspoons 

Cumin seeds(Jeerakam) - 1/4 teaspoon
Black pepper - 10-15 No:s

Coconut oil - 3 teaspoons
Curry leaves
Mustard seeds
Whole red chilly - 2 no:s 
Salt - to taste

Water - 3 cups 


Cut carrot and potatos in medium sized square pieces. Heat  2 tablespoons of ghee in a pressure cooker. Add cumin seeds, black whole pepper ,onion and green chillies and saute for 2 mins. Wash the basmati rice properly and add the diced carrots , rice and green peas. Add turmeric powder and saute well for 3 mins.Add 3 glasses of water(1cup rice to 1 1/2 cups of water is the ratio). Pressure cook it for 4 whistles. Take another bottom heavy pan. Add 3 teapoons of oil and splutter mustard seeds. Add whole red chillies and curry leaves. Add the diced potatoes.Cover it with a lid and cook it until the potatos are fully done.Add 1 teaspoon chilly powder,salt to taste. Make sure the potatoes become crsipy.When the rice is done move it to a serving dish . Add the cooked potatoes and sprinkle chilly powder,pepper powder. Mix it well with the rice and serve.

Side dish


Onion - big
Tomato - 1 
carrot - 1
cucumber - 1/4 th of a big one 
Curd - 1 cup
Salt- to taste 


Chop the onion ,tomato,carrot and cucumber in meidum sized square pieces.Add curd and salt to it.Goes well with the spicy fried rice.

Mixed Vegetable Fry


Beetroot   -  1 small
Carrot  - 1 small
Potato - 1 medium sized
Beans  - 4 no:s

Chilly powder - 1 tspn
Termeric powder - 1/4 tspn 
Coconut oil - 1 tbspn
Whole Red chilly - 2 no:s
Mustard seeds
Curry leaves
Salt - to taste


Cut all the vegetables in mediun sized square pieces. Pressure cook it (1 whistle is enough) . Heat oil in a bottom heavy pan.Splutter mustard seeds.Add whole red chillies and curry leaves. Add the cooked vegetables. Add salt to taste. Saute well,make sure that you dont crush the vegetables. Add chilly powder and turmeric powder.Mix well. Cook till the raw taste of the powders leave.Serve hot.
Goes well with rice.

Note: Make sure that you drain the cooked vegetables well.

Paal Paayasam


Vermicelli    -    200gms
Milk  -  500 ml
Ghee  -  2 1/2 tablespoons
Condensed milk  -  400g(1 tin Nestle Milkmaid)
Cardamom -  4-5 no:s
Cashew nuts &  Raisins  -  8-10 N:s
Sugar -  1/2 cup 
Water  -  4 cups
Boiled water - 8 cups   


Heat 2 tablespoons of ghee in a bottom heavy pan. Add the vermicelli to it and roast it till golden brown. Mix the milk with 4 cups of water and add it to the roasted vermicelli. Stir while adding the milk.Cook till the vermicelli is fully done. Take another vessel pour the condensed milk to it and mix it well with the hot, boiling water.Stir well while adding water. Pour this diluted condensed milk to the cooked vermicelli.Cook in a low flame. Stir in between. Add sugar and stir well.Add crushed cardamom and remove from fire.

Take another pan . Heat 1/2 tablespoons of ghee.Fry the cashew nuts. When it becomes golden brown add raisins.Add fried cashew nuts and raisins to the paayasam.Serve hot.

Note : If you want more creamier paayasam reduce the amount of water that is added to milk and condensed milk.
